This past weekend I had two lovely ladies in my kitchen for cooking classes. They live up in the Texas Panhandle area and drove over 300 miles just to attend! They spent the weekend in my home and we had lots of fun visiting, cooking, and eating!

When they were scheduling their classes and customizing their menus they also inquired about hotels in the area and a place to stay. I asked if they would like to schedule for this weekend and if they would just like to stay at my home since JR would be away. So not only did they attend my class…they were also guests in my home for a couple of nights.
They arrived on Friday shortly after lunch and we spent a little time visiting and getting to know each other. Debra moved to Comanche at the end of our freshman year in high school. She was very quiet and always had a beautiful smile. I didn’t know her well during high school but we have seen each other briefly a couple of times throughout the years. She brought her friend Laura and we just had a fun time all weekend!

We started out that afternoon and stirred up some Artisan French Bread from this book. While it was rising we made Peppermint Ice Cream and Brownies with Toasted Marshmallows and Fudge Frosting. While they selected the main entree’s for our meals, I added a few fun recipes like the Brownies and ice cream!
I taught them to make Poppy Seed Dressing that we ate with Spinach Salad. While our bread was baking we grilled Chili Lime Pork Tenderloin with Wild Rice and Steamed Broccoli with Sesame Lemon Butter.

After a few hours in the kitchen we sat down to enjoy our tasty meal and dessert!

On Saturday morning we made Gingerbread Waffles with Lemon Butter and Maple Syrup, Baked Apples, and Grilled Ham Steak for breakfast.
Then we baked an Angel Food Cake and made Lemon Curd to chill for our filling.

I took them to Denton for a little shopping and we went to the Antique Mall and Western Heritage Museum. On our way home we stopped by my neighbors and dear friends, June and Bill Marquis, where we took a quick tour of June’s flower gardens and the restored log cabin and old general store on their property. Then it was back to my kitchen to cook!

For our evening meal we had Beef Tenderloin with Twice Baked Potato Casserole, Homemade Ranch Dressing with Romaine Salad, Whole Wheat Yeast Rolls, and Lemon Filled Angel Food Cake.

On Sunday morning we made my version of Migas and the girls packed up for their long drive home.


It was a weekend full of fun, lots of laughter, good cooking and eating! Thanks Debra and Laura…my two new friends!
